Recipe: Baked Chicken Cordon Bleu

Popping in quickly today with a delicious, super easy, recipe idea.

Who doesn't like chicken, stuffed with ham and cheese, then dredged in butter, rolled in breadcrumbs?? Is your mouth watering yet? Because it will be when you make these!

Super Easy Baked Chicken Cordon Bleu

Ingredients:
  • 3-4 chicken breasts, flattened to 1/2 inch thickness
  • 4-6 slices of ham
  • 4-6 slices of mozzarella cheese
  • 1/2 stick of salted butter
  • 1 cup breadcrumbs (any kind will do)
  • Toothpicks
  • Parsley (fresh or dried) for garnish (optional)

Instructions:

1. Preheat oven to 350. Place chicken breasts between two pieces of plastic wrap and flatten with mallet until they are about 1/2 inch thick.

2. Lay a slice of ham on each chicken breast.
 3. Then lay a slice of mozzarella on top of the ham.
4. Gently roll the chicken breasts up (from top to bottom) and secure with toothpicks.
5. Melt the butter in a dish large enough to dredge the breasts. Likewise, place the breadcrumbs in a dish large enough to dredge the chicken. Completely cover each chicken breast with melted butter, and immediately dredge it in the breadcrumbs.
6. Place chicken breasts in a greased pan,  and bake at 350 for 40 minutes or until the chicken is no longer pink. Sprinkle with parsley.
7. Enjoy!
I served this with broccoli and crescent rolls and the boys LOVED it! Definitely going into the weeknight menu rotation. I hope you will try it yourself and let me know how it turns out.
